The traditional version of this dish is a hearty combination of minced or ground lamb and sautéed aromatic vegetables (carrots, onion, and celery) topped with a layer of mashed potatoes and baked to form a golden crust.
Add in the ground lamb, breaking apart with a wooden spoon. Once the meat is about halfway cooked through (about 5 minutes) stir in the soy sauce, Garam Masala, another tsp salt, and the cilantro. Continue cooking, stirring frequently, until the meat is cooked through, about 5-7 minutes more. Season to taste with salt.
